'Tis the season for mince pies!

We are now prepping for a busy Christmas period of baking 100's of our posh mince pies! Our sweet pastry takes 6 egg yolks and 2 eggs so very rich, but it means we can roll it quite thin so it stays crisp. To help with ensuring all mince pies are baked to order, we make the pastry and cut ready for the muffin tins and then freeze them between layers of greaseproof paper. This also means we have no waste from a batch of pastry. No increase in price this year!!
